Creamy Za’atar Broccolini Potato Salad

Perfect to add to your Christmas table with roasted meats or seafood, or to enjoy topped with crispy halloumi or soft-boiled eggs, this Creamy Za’atar Broccolini Potato Salad is full of flavour from the spice mix and with the perfect creaminess from the mayo! A lighter version of your typical potato salad that is a delight at every mouthful!

Ingredients needed for this Creamy Za’atar Broccolini Potato Salad

A super easy salad that comes together in just 30 minutes. The ingredients you will need:

  • Baby Potatoes
  • Broccolini
  • Corn Kernels
  • Spring Onions

For the Dressing:

  • Mayonnaise: The best quality one you can find from your local supermarket or if you homemade it even better!
  • Za’atar Spice Mix: A tasty Middle Eastern spice blend made of sesame seeds, thyme, sumac & salt. You can find it in larger supermarkets in the spice section or specialty Mediterranean supermarkets.
  • Extra Virgin Olive Oil
  • Apple Cider Vinegar
  • Salt & Pepper

How to make this Creamy Za’atar Broccolini Potato Salad

Cook the Potatoes & Broccolini

Start with cooking the potatoes in boiling water for 8-10 minutes till tender when you test them with a fork.

In the last 2 minutes of cooking add the chopped Broccolini.

Once cooked, drain and set aside to cool.

Make the dressing

Make the dressing by combining the mayonnaise, za’atar spice mix, apple cider vinegar, olive oil and a good pick of salt and pepper. Combine well till you get a thin dressing.

Combine & Serve

To the cooled potatoes and broccolini, add the chopped spring onions and corn kernels.

Add the dressing and combine till it has coated all the vegetables. Cool in the fridge for a few hours before serving or serve warm.

Serving suggestion for this Broccolini Potato Salad

This Creamy Za’atar Broccolini and Potato Salad is delicious served cold, but can also be eaten warm.

Make it a full meal topped with some protein for a filling lunch or dinner. These are my favourite toppings for the salad:

  • Halloumi: A 200 gr piece (I love Dodoni), chopped in small pieces and pan-fried till crispy or
  • Soft Boiled or Hard Boiled Eggs or
  • Grilled Chicken

Perfect to bring to dinner parties, BBQ and also goes so well alongside grilled meats or seafood. A great one for Christmas coming up and a lighter, healthier version than a classic potato salad.

Keep leftovers in the fridge for up to 3 days.

Can’t find the za’atar spice mix? Add a bit extra salt and pepper for seasoning the potatoes and the zest of 1 lemon instead.

A creamy potato salad seasoned with zingy za'atar seasoning

Ingredients

  • 500 gr Baby Potatoes (Halved )
  • 1 bunch Broccolini (Chopped (1 cup))
  • 1 small tin Corn Kernels (125 gr (half a cup))
  • 4 Spring Onions (Sliced)

Dressing

  • 2 tbsp Mayonnaise
  • 1 tbsp Za'atar Spice Mix
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • Large Pinch Salt & Pepper

Optional Toppings

  • 200 gr Haloumi Cheese (Sliced and Pan fried)

Notes

This recipe is for 2 serves as a main for 2 people if topped with haloumi or hard/soft boiled eggs.
Double the recipe for a generous side dish for 4 people.
