Linguine with Zucchini, Capers and Lemon

It’s summertime here and there is an abundance of sweet zucchini and ripe lemons and they go so well together! This speedy Linguine with Zucchini, Capers and Lemon comes together in no time – the sauce is simple but bursting with flavour from the capers and the lemon. Finishing with parmesan and butter makes the most delicious silky sauce, a perfect summer-time pasta!

This recipe has ingredients that scream summer, it’s a light pasta dish and the zucchini has a mild, sweet flavour at this time. But, the best thing is that you can also find these ingredients all year round – making this recipe an easy pasta dish perfect for a quick mid-week meal.

  • Linguine Pasta: I like to use thick linguine but you can also use spaghetti
  • Zucchini: Thinly sliced zucchini or courgettes
  • Lemon: Juice of 1 lemon
  • Capers
  • Garlic
  • Olive Oil & Butter
  • Parmesan: Finely grated parmesan or Parmigiano Reggiano
  • Salt & Pepper

How to make this Linguine with Zucchini, Capers & Lemon

Sautee Zucchini & Garlic

Bring a large pot of salted water to the boil.

Start by heating 4 tablespoons of olive oil in a large non-stick fry pan over medium heat.

Add the chopped garlic and sliced zucchini, along with a large pinch of salt and pepper. Saute for 6-7 minutes till softened and slightly caramelized.

In the meantime, cook the pasta till al dente and reserve some cooking water.

Add Capers, Pasta & Lemon

Once the pasta is cooked, reserve some pasta water and set aside.

Add the pasta to the zucchini & garlic and gently combine. Add the capers, lemon juice and lemon zest too and stir.

Combine with Parmesan

Add the reserved cooking water, add the butter and parmesan and combine with the pasta over medium heat for 1-2 minutes. The sauce should thicken and coat the pasta beautifully.

Take off the heat & serve immediately with more parmesan and freshly cracked pepper. Enjoy!

Ingredients

  • 300 gr Linguine Pasta
  • 4 tbsp Olive Oil (extra virgin, more to serve)
  • 1 Large Zucchini (or 2 small zucchini, thinly sliced)
  • 2 Garlic Cloves (finely chopped)
  • 2 tbsp Capers
  • 1 Lemon (Juice and zest of 1 lemon)
  • 1 tbsp Butter
  • 6 tbsp Parmesan (and more to serve)
  • Salt & Pepper
  • half cup Pasta cooking water
