Universal Studios Singapore is an attraction that you DO NOT want to miss if travelling to Singapore! Filled with loads of areas to explore, rides, shows and of course plenty of places to shop and eat. There are things to do here that the whole family will enjoy, no matter what age!

Must Do Experiences at Universal Studios Singapore

  • The little ones will love having adventures in the Sesame Street Spaghetti Chase and meeting their favourites characters from Sesame Street!

  • Stroll around the park and rub shoulders with all your favourites like the Transformers and the Minions at the Character Meet and Greet for each themed zone of the park.
  • Check the times and don’t miss the Live Stunt Show based on the movie by the same name WaterWorld. Getting to Universal Studios Singapore

Universal Studios Singapore is located within the Resorts World Sentosa Complex, on Sentosa Island. Here, as well as Universal Studios, you can find a numbers of attractions such as the S.E.A Aquarium, Adventure Cove Waterpark as well as hotels, restaurants and a Casino.

To reach Universal Studios from mainland Singapore, you can easily hop on the Sentosa Express from HarbourFront MRT (Metro station at VivoCity Shopping Centre) and alight at Resort World Station, that is just outside the Resorts World complex.

Entry Tickets to Universal Studios Singapore

Entry Tickets for Kids at Universal Studios can be purchased directly at the gates, or for ease you can also purchase them online from Klook. You can also buy here online the Express Pass in Advance to save time and skipping the queues on the rides!

Adult tickets are charged at prices starting from $82 SGD for Adults and $61 SGD for Children Aged 4 to 12 years old.

FAQ: Is a toddler free for Entry at Universal Studios Singapore?

We travelled when our toddler was just under 3 and his entry was FREE. So despite not being able to go on many rides because of the minimum height requirement, as a toddler he still got to do quite a bit at the park and his entry did not cost us anything!

Zones of the Park

The park made up of 7 different ‘zones’ that are each themed differently:

When you enter the park at the big Universal Studios dome, you go straight into HOLLYWOOD. If you then continue walking anticlockwise you will get to NEW YORK (Sesame Street Characters), onto SCI-FI CITY (Transformers), then moving onto ANCIENT EGYPT (The Mummy), to the LOST WORLD (Jurassic Park themed) and finally into FAR FAR AWAY (Shrek). Each zone has also its own themed walkway, souvenir shops and eateries.

And stay tuned.. there is one more epic theme coming to Universal Studios in Singapore! Minions Land, is due to open at the park in 2024. At the time of our visit (late 2023) a section of the park was closed off, it was the former Madagascar Zone, and that is where Minions Land is due to open.

Universal Studios Singapore for toddlers and young children

Height requirements

There is a variety of rides and shows that the whole family can enjoy at Universal Studios Singapore, but as a general note most of the rides have a minimum height requirement of 92 cm. The bigger rides and rollercoasters usually have a minimum height requirement of 122-125 cm.

Note that for all the rides, children under 122 cm need to be with an accompanying adult. For some rides, hand held infants are also not allowed for safety reasons.

At the time of our trip our toddler (almost 3 yrs) was around 90-92 cm and could only go on a handful of rides. These listed below are the popular ones for small kids with relevant height restrictions, plus noted some favourites:

So if you are visiting with a toddler below the min 92 cm height you will likely be doing some of the same rides over and over. There are although other things to do, such as the Character Meet and Greet that happen all day at the park and lots of exploring.

For older kids higher than the min 92 cm, my older child (5 yrs) was around 110cm, he was able to go on these:

Handy Tips for Visiting Universal Studios Singapore with toddlers

Get there early – plan to spend a full day there

The park is usually open from 10am to 6pm, but on some days it open a bit later at 11am. Check the website for the most up to date information.

Allow to spend a full day there as there is so much to see. With kids you will need to take lots of snack/drinks/ice cream breaks if it’s a hot day, and most days are.

If you only have half a day to visit the park – I would opt to go in the afternoon from 2pm onwards. We went mid week and a lot of the bigger crowds had left by mid afternoon and the morning was a lot busier as the crowds entered when the park just opened.

Go midweek and outside holidays if you can

The park gets very busy – we went on a weekday and still some rides had some very long lines of 1+ hours wait. If you can, visit midweek and outside of popular holidays!

There is also the option to pay extra for an Express Pass to skip the queue once per ride (Universal Express Pass starting at SG50 pp) or as many time as you like (Universal Express Pass Unlimited starting at SG80 pp). Note the cost in additional to the Entry ticket.

I can see that it would be totally worth it to purchase the Express Pass if you are visiting during busy periods like a weekend or school holidays, as waiting in the long lines in the heat with young kids is defenitely not fun!

Leave the most popular rides for early afternoon or just before closing time

We noticed that as we got in as the park opened, the most popular rides had long queues almost immediately, some with waits of 45 min to over 1 hour.

But in the afternoon at around 2pm a lot of the queues had gone and we managed to do quite a few rides. That was the same at around 5 – 5.30 pm just before closing time, a lot of people had left already and we could go on several rides one after the other with no queue.

The other tip for parents is to make use of the Single Rider lanes if you are tag teaming to watch the kids. These lines are usually shorter and there was no queues on these towards the end of the day!

Bring a pram

There is lots of walking and it’s hot, so the little ones get tired very easily! Prams can also be hired from Universal Studios Singapore at the entry.

Venture outside the park if you need to stock up on drinks or snacks

Universal Studios has heaps of places to stop and refuel for drinks or snacks but it is very expensive! Get a pass out and venture just outside the park to the 7/Eleven around the corner to stock up on cold drinks and Ice cream for a third of the price of what you would find inside the park.

Where to Eat and Stay when visiting Universal Studios Singapore

Eating in Universal Studios Singapore

There are several eateries withing the park as well as several snack and food stands to grab drinks. Some popular eateries include Goldilocks, KT’s Grill & Loui NY Pizza Parlor for some classics like pizza, burgers & fried chicken and Shrek themed waffles.

But note that, for the convenience and experience of eating inside Universal Studios Singapore, you will be paying a premium for it!

If you want to venture outside the park for a lunch for some more choice on what to eat, you can also get U/V light passouts (yes very cool…as we thought!) and check out the eateries just outside the park within Resorts World Sentosa.

The popular ones are Malaysian Food Street, which has a lot of different Hawker street style classic dishes (around 10-12 SGD per meal). For a fancier feed, also across from Universal Studios, check out Gourmet Park, for some seriously gourmet food trucks.

Around the corner there is also a 7-Eleven convenience store, if you need to stock up on cold drinks and ice creams to cool off with prices from $1-2 SGD, a fraction of what the same would cost inside the park.

Shangri-La Rasa Sentosa

The ultimate family resort in Sentosa is the well knows Shangri-La Rasa Sentosa. Located at Siloso beach facing the sea, the resort is complete with it’s own water play area with slides and water sprays, as well as a state of the art Kids Club. This family resort is perfect for families travelling with young children.

Village Hotel Sentosa

This recently opened hotel is a stunning complex with over 600 rooms, most of them interconnecting so perfect for families. The Pool deck on level 3 is the highlight of the resort with 4 themed pools, including it’s own lazy river and many shallow kid-friendly pools! This large, expansive complex is located on the south of the island, in the cliff above the trendy Tanjong Beach. For families there are a variety of accommodation options that include rooms as well as villas. The Kids club and glamping options for the rooms are particular popular at this luxurious resort!

A beautiful one-pan dish that is PERFECT for your Christmas lunch or dinner! This Prawns and Chorizo Christmas Paella is colourful, full of flavour and loaded with so many fresh prawns! This is the main dish that is the centrepiece of many celebrations, and guaranteed to wow your guests.

Ingredients to make this Prawns and Chorizo Christmas Paella

Rice

For this recipe, I used Calasparra Paella Rice that you can purchase on Amazon HERE or you can find other brands of Bomba rice from your local delicatessen or specialty grocery stores.

Some common questions:

What rice can I use for paella?

The typical rice that is used for paella in Spain is generally the Bomba or Calasparra variety. Both of these rice types are grown in the south of Spain near Murcia, in the Calasparra region.

The main feature of Bomba and Calasparra rice is that it has a very high absorption rate. The rice can soak up all the flavours of the paella without losing its shape or falling apart. That is what makes Bomba or Calasparra rice perfect for Paella!

Can I use Arborio rice instead of Paella Rice?

You can, if you really can’t get a hold of Bomba Rice. The main difference here is that Arborio is much more of a creamy rice as it’s commonly used to make risotto, so the final result will be different texture wise.

Prawns

For this Prawn and Chorizo Paella, I used Australian fresh large green banana prawns. I usually buy them whole and raw. I boil them in salted water then cool them down immediately and generously top the paella with them. The more the better! You can use whatever prawn/shrimp type you prefer.

Chorizo

I used fresh chorizo sausages that I found at my local deli. I have found that it’s not easy to find authentic dried chorizo imported from Spain (unless you can find a Spanish / Latin American deli) and many of the chorizo versions I have tried lack a bit of depth of flavour with the garlic and paprika especially, hence why I add more of these ingredients in the recipe.

TIP: If you can get a hold of dried chorizo, halve the quantity as the flavour is generally stronger than in the sausages.

Saffron & Smoked Paprika

To give the rice the authentic yellow tinge and add some smokiness from the paprika.

Other ingredients needed

  • Onion
  • Garlic
  • Peppers
  • Green Peas
  • Water or Chicken / Vegetable Stock (I used water and stock cubes in the recipe)
  • Tinned Tomatoes
  • Lemon Wedges & Chopped Parsley to serve
  • Salt, Pepper & Olive Oil

Equipment needed: A Paella Pan!

For this recipe, I use my trusted 17 inch / 43 cm Carbon Steel Paella Pan. You can pick one up from Amazon, like THIS ONE, or from your local homeware store.

TIP: Don’t have a paella pan? A large pot will also work and you can serve the rice individually as you would a risotto and top with your garnishes.

For a smaller serving of the paella eg. for 4 people, you could also use a large cast iron skillet or pan and garnish it as you would a paella.

How to make this Prawns and Chorizo Christmas Paella

Cook the Prawns

First thing, to cook the prawns. Bring to the boil a large pot of generously salted water and boil the prawns for 4-5 minutes till cooked. Strain immediately and place in a bowl with some ice to cool and stop cooking. Set aside.

Fry the chorizo

Heat some olive oil in the paella pan over your largest burner over the stove and start by frying the sliced chorizo till golden and crispy for 5 minutes.

Add the vegetables

To the chorizo, add the garlic, peppers, and onions and fry gently while constantly stirring for 10 minutes. Season with some salt and pepper.

Add the rice, tinned tomatoes and stock

Once the vegetables have softened and caramelized, add the rice, the tinned tomatoes, and 800 ml of water (fill the tin from the tomatoes twice), Add the stock cubes, salt, paprika, and saffron and give everything a good stir.

Cook the rice gently

The rice will look very watery at this stage, once everything has started to bubble again, turn the heat to low and keep stirring from the edges of the pan to the middle, for 10 minutes. Make sure every grain of rice gets the same love to cook evenly.

After 10 minutes the rice should almost be cooked. The rice should still have a bite to it and you can add another cup of water to continue cooking while stirring for 4-5 minutes.

Add the peas

Add the peas and continue stirring. Give or take 1-2 extra minutes till the rice is cooked to your liking.

Add the prawns, garnish & serve

The paella is ready! Take it off the heat and top with lemon wedges (delicious squeezed over the rice), the cold prawns fresh chopped parsley, and some olive oil. Place it in the centre of the table and let everyone help themselves.

  • 1 17 inch Carbon Steel Paella Pan

Ingredients

  • 800 gr Raw Prawns, shells on
  • 3 Raw Chorizo Sausages (Sliced in 2 cm pieces)
  • 2 Red Peppers (Diced)
  • 6 Garlic Cloves (Thinly Sliced)
  • 1 Red Onion ((1 large or 2 small), diced)
  • 2 cups Rice (Bomba variety)
  • 1 litre Water or Unsalted Chicken or Vegetable Stock
  • 2 Stock Cubes
  • 1 can Diced Tomatoes (400 g tin)
  • 1 Pinch Saffron
  • 1 Tbsp Smoked Paprika
  • 1 Cup Green Peas (Thawed)
  • 1 Lemon (Cut into wedges)
  • 1 bunch Parsley (finely chopped)
  • 8 tbsp Extra virgin Olive Oil
  • 1 tsp Salt (and more to season if needed)
  • Ground Pepper (to taste)

Instructions 

  • For the Prawns: Bring to the boil a large pot of generously salted water and boil the prawns for 4-5 minutes till cooked. Strain immediately and place is a bowl with some ice to cool and stop cooking. Set aside.

  • After 10 minutes the rice should almost be cooked. The rice should still have a bite to it and you can add another cup of water on continue cooking while stirring for 4-5 minutes.
  • Add the peas and continue stirring. Give or take 1-2 extra minutes till the rice is cooked to your liking. Season more if needed.
  • Take it off the heat and top with lemon wedges (delicious squeezed over the rice), the cold prawns and fresh chopped parsley and some olive oil. Place in the centre of the table and let everyone help themselves.

Where is Village Hotel Sentosa

Village Hotel Sentosa is located on the island of Sentosa, a man made island just off the coast of the south of Singapore. Within a short walk from the hotel you can reach the beach, as well as the many attractions within Resorts World Sentosa like Universal Studios & S.E.A Aquarium.

The closest monorail station is 5 minutes away, Imbiah station, which can take you directly into VivoCity shopping centre in Singapore. From there you can take the Metro (MRT – HarbourFront) into anywhere you need to get to in Singapore!

Getting to Village Hotel Sentosa from Singapore Changi Airport

Taxi / Grab

The easiest and quickest way to reach Sentosa is with a taxi from Changi Airport. The trip is around 20 minutes and it costs around 25-35 SGD depending on the time of day. Taxis are available at the airport, and if travelling with children, they can travel on the parents lap on the back seat.

Ridesharing company Grab (think Uber for South East Asia) also widely operates in Singapore and can be more cost efficient than taxis.

If travelling with young children, you must book a Grab Family. Grab Family generally has car seats and boosters installed for young children.

Entry charge when arriving in Sentosa

If arriving by taxi and visiting Sentosa for the day, an Entry Fee to the island is added to the taxi fare.

If you are staying on Sentosa, you will just need to show your accommodation confirmation letter or QR code provided by the accommodation to enter Sentosa and you/the taxi driver won’t be required to pay the Entry Fee.

The fee is between $2-$6 SGD to enter the island, depending on time of day that you enter.

Village Hotel Sentosa is a large resort complex with onsite restaurant, a stunning pool deck on the 3rd floor with 4 pools, including it’s own lazy river, swim up bar and gym.

This is where breakfast for Village Hotel Sentosa is served. We did not have breakfast included in our room price so I cannot comment on the food.

It is although a buffet style breakfast serving Western and Asian dishes. It’s also open for lunch and dinner with an extensive a-la-carte menu.

Dining Options – At Mess Hall complex, located directly across from the Hotel

The gorgeous white colonial building was once a Military outpost, now hosts stylish restaurants and a convenience store. It’s located right across Village Hotel Sentosa, as well as being very easily accessible from nearby Hotels The Barracks & the Outpost Hotel.

  • 7/11 Convenience Store: Proved to be extremely convenient to pick up some snacks for the room and ice creams when it got too hot. Located just outside reception on the ground floor.

  • MIYOSHI by Fat Cow: Japanese Fine Dining
  • Royal Taj: Indian Dining

Swimming Pools

The Pool Deck on level 3 is the jewel in the crown of this resort. Lush greenery and coy ponds surround the pool deck and there is plenty of space to have a lounge or curl up on the many round pods to read a book. All the pools are located on Level 3 via lift or escalator from reception. From Level 3 you can get a great view over the sea.

  • Adventure Pool: the largest pool in the centre of the resort with a shallow end and terraced higher end.

  • Pamukkale Pool: A stunning infinity pool that looks over the sea, with terraced shallow pools to resemble Pamukkale in Turkey. It’s the perfect place to relax and enjoy the views over the water (and the monorail depot, the highlight for the kids!)

  • Children Play Pool: shallow and with 2 small water slides and water sprays, this pool is a real hit with the little ones.

  • Lazy River: so refreshing and surrounded by lush greenery and mangroves. You can grab one of the bright yellow pool floats from the resort and be carried along the river for a float.

This hotel is a large complex with 606 guestrooms. The resort is largely catered to families with lots of rooms set up as interconnecting family rooms.

Room types

There are just 3 room types at the resort. Deluxe Rooms (for 2 people), Family Rooms and Deluxe Family Rooms (both family room types are 2 rooms interconnecting). Deluxe family rooms are slightly larger than the family rooms and have a bathtub in one of the rooms. We stayed in a standard Family room.

Many of the rooms at Village Hotel Sentosa are Family Rooms. The Family Rooms are essentially 2 rooms interconnecting with 2 doors, which you can keep open or closed for privacy.

Each room has it’s own 49 inch TV, bathroom, shower and storage. There is also a safe to store valuables. The bed configuration can be set up as 2 doubles or one double and 2 singles.

We opted for 2 doubles and had a bedrail on one side of the kids bed (3 and 5 yrs old).

The rooms are compact, of minimalistic design and with neutral colours. There are large windows facing either the pool, island or sea. The windows have curtains and some great blackout blinds which made it easy for the kids to get to sleep.

The rooms are very well designed with smart use of space, but keep in mind, they are very compact. There is no wardrobe, just a shelf to store a suitcase and a few drawers and hangers to store belongings.

No tea or coffee is provided in the room. Instead, on each floor, there is a vending machine for snacks and drinks, as well as a communal Tea / Coffee station.

Here, you can take what you need for your room and there is also a water / ice machine, which proved to be extremely handy to fill up water bottles with ice on our way out for the day or in the evening to have a cold drink.

They have the same set up at every lift and floor and everything was always well stocked.

Rooms are serviced daily and we found it to be very good with the rooms thoroughly cleaned each day.

In Room Dining is available across day and night and the menu can be seen on the hotel TV.

A clever feature in these rooms is that instead of plastic water bottles, each room is fittet with a Hyflux filtered water tap so it was great to refill our own water bottles. The water in Singapore is perfectly safe to drink anyway but this was a nice extra touch!

The wash basin is located at the hallway, next to the luggage storage as you enter the room. The rain shower & Japanese Toto Washlet are in a separate cubicle.

Family Friendly facilities at Village Resort Sentosa

Despite being a hotel that is very geared around families – there is no kids club at this resort. That said, the hotel is very comfortable for families travelling. These are some of the family friendly facilities at Village Hotel Sentosa:

  • Convenient interconnecting room layouts, which was hard to find for a similar price point in Sentosa. While researching we found that most of the other larger resorts in Sentosa offered family rooms with all the beds in the one room, one bathroom and one tv, rather than in interconnecting but separate rooms.
  • Blackout blinds in the rooms
  • Bed rails and cots available upon request for smaller babies and infants (up to 9 kg only)
  • We found that the Swimming Pools were fantastic for kids, especially young ones. The Children’s Play Pool and part of the Adventure Pool are very shallow, between 30-50 cm.
  • The restaurant Native Kitchen has plenty of high-chairs, as well as a kids menu

  • Family Movie Nights on Friday and Saturday nights by the Adventure Pool was a highlight and a great family activity organized by the hotel. They set up bean bags and provide you with mosquito patches and overall had a really great atmosphere.

At our time of stay there were no other kids activities running so it would be best to contact the hotel ahead of time as some activities may only run seasonally during the holidays.

Resort World Sentosa

Village Resort Sentosa is conveniently located a short walk away from Resort World Sentosa (10 minute walk or 1 stop on the Sentosa Express Monorail). At Resorts World Sentosa you can find Universal Studios, S.E.A Aquarium as well as many eateries, shopping outlets and the Casino.

There is so much more to the above though and so many attractions to suit all ages. Some popular ones include Adventure Cove Waterpark, Madame Tussauds as well as go karting at Hyperdrive, Indoor Skydiving at Ifly, ziplining at Mega Adventure Park and the night show at Wings of Time.

For a lazy day by the beach, walk at the back of the hotel to reach Palawan beach and stroll along to cross over the Big Bridge. There are many beach clubs along the beach to relax and have something to eat too.

Catching the Singapore Cable Car across Sentosa and at the top of Mt Faber across to Singapore is also a must do attractions and a great way to see the island from a high viewpoint.

VivoCity Shopping Mall is a huge shopping centre (the largest is Singapore) only 2 stops away on the monorail. From there you can catch the MRT (metro) into anywhere in Singapore.

Hotels nearby Village Hotel Sentosa

Sharing the same complex and pool as Village Hotel Sentosa (and part of the same hotel chain) is the Outpost Hotel. This hotel is more geared for couples / friends and has its own stunning Adults only Sky Pool and Bar with cool beats playing throughout the evening, called 1- Altitude Coast.

Village Hotel Sentosa Review – Final thoughts

All in all, we really enjoyed our stay at Village Resort Sentosa! Would I come again to Village Hotel Sentosa? Absolutely YES! Would I recommend it for families? YES.

I highlighted the things that I loved about the Hotel and some things that I didn’t love so much about our stay below.

What I loved about Village Resort Sentosa

  • The standout feature for this resort is without a doubt the Pool Area. It is the most impressive pool set up that I have ever seen in a hotel. I loved that there were so many areas that you can go to, always sunbeds, you can move across to the 4 pools and they are all so different.
  • The design with immaculate gardens, coy ponds to the side and greenery that is on top over the roofs of the pool too, make this the highlight of the stay.

  • Location we found to be really great. It was so easy to get around in Sentosa or into Singapore with the the Sentosa Express Monorail directly into Vivocity Shopping Centre and from there hop on the MRT.

What I didn’t like so much about Village Resort Sentosa

  • The main thing that we found a bit challenging during the stay was the size of the rooms. The rooms are quite compact and as we stayed just over a week – we had quite a bit of luggage and the lack of storage just meant we had things lying around everywhere.
  • We also had quite a bit of laundry to do (always the case with young kids) and there was little or no space to dry it. There was a laundry service at the hotel but it was quite pricey (charged per item) so we did not use it and arranged our own washing.

I think perhaps the room set up for this hotel is more geared towards guests staying for a short stay, rather than longer stays hence the smaller rooms.

This baked conchiglioni with mushrooms and ricotta is a delightful pasta dish that will make you come back for seconds! The large pasta shells are filled with ricotta and sauteed mushrooms, topped with bechamel, and baked till golden.

Ingredients required for these Baked Conchiglioni with Mushrooms and Ricotta

Stuffed pasta shells ingredients

  • Conchiglioni – it’s a type of pasta that is shaped like a large shell (Conchiglia in Italian). There are a few different versions and sizes of these, Conchiglie is a common one you find that is a smaller version of Conchiglioni. Conchiglioni is the largest and perfect for stuffing! I used this type of Conchiglioni Giganti.

Another pasta type of similar size of the Conchiglioni is called Lumaconi (taking the name of a snail with shell, a lumaca).

  • Mushrooms, I opted for using King Oyster Mushrooms but any type of button or oyster variety are great choices for these stuffed shells. I like using King Oyster Mushrooms or Baby Oyster Mushroom variety as they are so meaty and full of flavour!

  • Three Cheeses – to make the filling for the shells extra tasty and creamy. Ricotta, Parmesan & Mozzarella to combine with the mushrooms.
  • Garlic & Butter, to sauté the mushrooms.
  • Salt, Pepper & Olive Oil

Bechamel Sauce Ingredients

Only 3 basic Ingredients are needed for a basic bechamel sauce. Butter and Flour to make a Roux, and Milk.

To season, Salt, Pepper and an essential ingredient that I always use in bechamel, grated Nutmeg! It adds a beautiful nuttiness and aroma to sauce which I love.

How to make these Baked Conchiglioni with Mushrooms and Ricotta

Fry the mushrooms

The first step to prepare the filling for these pasta shells is to gently sauté the mushrooms in finely chopped garlic, a knob of butter, and a generous pinch of salt and pepper. The mushrooms will need to cook down for at least 10-15 minutes till the liquid from them has completely evaporated. Set aside to cool.

Boil the conchiglioni

In the meantime, bring a large pot of salted boiling water to the boil and cook the conchiglioni for 4 minutes. This is all they will need to gently soften and make it easy for you to stuff with the filling. They will continue cooking while baking when filled and not end up being overcooked!

Drain the conchiglioni of the excess water. In a large baking tray (I used a large 38 x 25 cm dish) drizzle a generous amount of olive oil and place the conchiglioni there in preparation to filling them.

Tip: Don’t wash up the pot that you boiled the conchiglioni in yet! You can use it for making the bechamel sauce later.

Combine the mixture and stuff the shells

Combine the sauteed mushrooms with the ricotta, parmesan and mozzarella, this is the stuffing mixture ready and begin stuffing each shell with a small spoon.

Make the bechamel sauce

Start first by heating the oven to 180 (160 fan forced) in preparation for the shells to bake, as the bechamel won’t take long to make!

For the bechamel, start by melting the butter in a large pot over medium heat. When the butter is melted, add the flour and whisk vigorously till the butter and flour have combined and the roux starts to foam and thicken.

This is when you can add the milk. Add a cup at a time and keep stirring with the whisk to prevent lumps. You will see the sauce come to a boil and start to thicken (like a thick custard consistency), and this is when you will know that the sauce is done. Season to taste with a pinch of salt, ground pepper, and grated nutmeg. Remove from the heat to cool slightly.

Tip: You can make the bechamel sauce and filling in advance the day prior to save time, and just keep them in the fridge till you need it to top the stuffed conchiglioni!

Arrange the stuffed shells and top with bechamel

Once the bechamel is done, you can pour it over the stuffed conchiglioni and spread it across all of them so that they are all covered in sauce. Top with a sprinkle of more grated parmesan and some olive oil. The conchiglioni is ready for baking!

Bake and Serve

Bake in a hot 180 degree (160 fan forced) oven for 35-40 minutes till golden. For an extra crispy top, turn on the grill for a few minutes! Serve immediately and enjoy!

Equipment

  • 1 large baking dish 38 cm x 25 cm

Ingredients

Stuffed Conchiglioni

  • 300 gr Conchiglioni pasta (or large pasta shells or lumaconi)
  • 300 gr Raw King Oyster Mushrooms (roughly chopped)
  • 4 Garlic Cloves (finely chopped)
  • 1 tbsp Butter
  • 300 gr Fresh Ricotta
  • 200 gr Mozzarella (Cubed in 1 cm pieces or shredded)
  • 50 gr Parmesan (grated, plus extra for serving )
  • 6 tbsp Olive Oil
  • Salt and Pepper to taste

Bechamel Sauce

  • 60 gr Butter ((approx 4 tbsp))
  • 60 gr Plain Flour ((approx 7 tbsp))
  • 600 ml Milk
  • half tsp Grated Nutmeg
  • Salt & Pepper to taste

Instructions 

  • In a large fry pan, add a few tablespoons of olive oil over low to medium heat. When hot, gently sauté the mushrooms, the finely chopped garlic and a generous pinch of salt and pepper. Cook down for at least 15 minutes till the liquid from the mushrooms has completely evaporated. Take off the heat and add a tablespoon of butter and set aside to cool.
  • Bring a large pot of salted water to the boil and cook the conchiglioni/shells for 4 minutes. Drain and set aside in a large baking tray with a few tablespoons of olive oil.
  • Now to making the filling, combine the sauteed mushrooms with the ricotta, parmesan (reserve a few spoonfuls for topping the shells when they are ready for the oven) and mozzarella. Begin stuffing each shell with a small spoon and place the shells back in the baking tray.

Cooking tips:
  • Use the same pot to boil the shells and make the bechamel sauce to save some washing up.
  • You can make the filling and the bechamel up to a day in advance and store in the fridge, ready for stuffing the shells when you are ready to bake them.
Storage suggestions: The cooked conchiglioni will last in the fridge in an airtight container for up to 2 days.

Warrnambool, is 3 hour (approx. 260 km) drive south-west of Melbourne, in the state of Victoria. It’s the largest town on the Great Ocean Road, and the popular 12 Apostles is just an hour away. The South Australian border is about 2 hours away by car and Adelaide can be reached in about 6 hours drive from Warrnambool.

Why choose Warrnambool for a holiday

There are many fantastic options for holidaying along the Great Ocean Road. There’s Torquay, Lorne, Apollo Bay and there are lots of other little towns in between. So what makes Warrnambool a great place for a holiday in?

  • Accommodation to suit all budgets. With a population of 35000, it’s the largest town along the Great Ocean Road – you can call it a country ‘city’. This means many great options for accommodation to stay in to suit all budgets from cabins in well-equipped Holiday Parks, to private Airbnb, Motels, Luxury Hotels, and Serviced Apartments.

  • A proper town centre with lots of food options, tourist attractions and all the amenities you need. A thriving dining scene with restaurants, family friendly pubs and great coffee shops. More on this below on the Where to Eat in Warrnambool Section.
  • Beautiful spacious pristine beaches. Some of them are also very shallow in low tide as protected by the nearby islands.
  • Explore Nature at your doorstep. Lots of well-maintained boardwalks to explore the iconic coastline. Head nearby to Tower Hill Reserve, just 14 km outside of Warrnambool, and venture into this large nature reserve inside an extinct volcano crater. The reserve is now a thriving habitat of native flora and animals. The Winter Whales are also a popular attractions during the winter months (June to September). Logan’s beach in Warrnambool has a great setup to see the whales during calving season!

Stingray Bay

When to visit: Everyday

Stretching along side Lady Bay, this fabulous beach is just too good to miss. It has a few little islands in front of it, making the beach itself protected from the waves.

In low tide you can be walking for ages on the sands with barely an inch on water! All you can see is your reflection on the glistening sand!

The Merri River also joins up on this beach so you can take a refreshing dip on the river stream.

Tip: There is road parking right along the beach and public toilets are available.

Head to Pavilion Cafe & Bar just a few minutes walk away for a great breakfast or lunch with a view over the water.

Lake Pertobe & Playground

When to visit: Everyday. Motor boats for hire only available Sat & Sun

If it’s up to the kids, you will probably end up spending a LOT of time here.

This park and lake is huge and absolutely gorgeous, not just for kids, but really for anyone. You can kayak and hire motor boats to go on the lake, and do lots of walks across the bridges that connect the islands in the lake.

It’s beautifully landscaped and has lots of play areas, the newest part of the park is towards the huge maze. The maze has also a higher viewing platform in the middle so parents can keep an eye on the kids.

There is a play area for younger kids with a huge sandpit, a splash area set up with spraying ‘whales’, a huge tunnel slide and a giant flying fox (for kids AND adults). Lots of sitting areas and BBQs. Truly one of the best parks I have ever seen to suit all ages!

Tip: Pack bathers for the splash park and a picnic. There is lots of lawns and picnic tables to have some lunch!

Warrnambool Wildlife Encounters

When to visit: Contact directly to find out when tours are running

This was a standout and such a rare treat if you love native animals and really want to get up close to them.

It’s located about 20 minutes drive from Warrnambool and it’s a wildlife park, but they only run scheduled small group tours. You MUST book ahead online and everyone gets a chance to pat and feed animals.

We all really enjoyed this and we got to see some amazing animals up close like koalas, kangaroos, wombats, dingos and so many more!

Flagstaff Hill Maritime Village

When to visit: Open 10 am to 5 pm Everyday

This place was a real surprise, it reminded me a bit of the replica town of Sovereign Hill (in Ballarat, also in Victoria) and also has a replica maritime village that you can go and explore.

You start off by visiting the museum where you can learn about what life was like in the 19th century and the history of the Shipwreck Coast. You can see lots of artefacts from the shipwrecks, including the famous Loch Ard Peacock – which is valued at a whopping 4 million AUD (2.5 Million US)!

The kids will enjoy exploring the little seaside village visiting all the little shops and walking along the cobblestone streets.

There is an old school lolly store where you can buy $2 bags of lollies and also a tea room where you can stop for scones and a cup of tea.

It was a bargain of a family activity, as we were only charged for our 2 adults tickets and the kids were free (both under 5).

Upon entry, the kids were given a small bag of duck feed each so they could feed the ducks. That was definitely the highlight of the outing for them!

The day ticket price also includes a 40 minute guided tour, from a fully dressed up guide in a period costume. A night Light and Sound Show is also available that recreates the tale of Loch Ard.

Minigolf by the Sea

When to visit: Open 10 am to 4 pm on Weekends. 12 pm to 4 pm midweek (Mon to Fri)

A great morning or afternoon activity that everyone can enjoy. It’s an all ages, all abilities 18 hole mini golf course right next to Lake Pertobe playground. Great set up and the grounds very well maintained.

It also has an adjoining jumping pillow that you can add entry on with minigolf for an additional $3. This was another very affordable activity for $35 for our family of 4. It was free for my younger toddler but they still kindly gave him a golf ball and clubs so he really enjoyed being part of the fun!

Where to stay in Warrnambool

Warrnambool town centre and surrounds has some great options and a lot of variety of accommodation types to suit all budgets.

There are some large hotels in the Lady Bay area near the beaches, such as the Deep Blue Hotel & Resort with their own hot springs baths and Lady Bay Resort with apartment-style accommodation.

Quest Warrnambool and Warrnambool Gallery apartments are two of my favourites located right in the heart of the city centre. They are a short walk from Liebig Street, which has a great variety of shops, restaurants and coffee shops too.

There are also many other options that include Holiday Parks, Motels and AirBnbs.

There are also lots of fabulous places to eat in Warrnambool, ranging from fine dining to family-friendly pubs. There is a great coffee scene with some fantastic cafes where you can your coffee fix like Bohemia, Piccolo, or the Beach Kiosk.

Warrnambool has a great variety of places to eat, it’s the largest town along the Great Ocean Road so you won’t be running out of places to dine out or take in! With so many family friendly options like pubs and bowls clubs, as well as nice cafes’ and upmarket seafood restaurants, these are some of the best meals we had during our family stay in Warrnambool.

Where is Warrnambool

Located 3 hours (approx. 260 km) drive south-west of Melbourne, Warrnambool is the largest town on the Great Ocean Road. With a population of around 35,000 people, it has the feel of a proper regional city. It has town centre, tourist attractions, amazing beaches and all the amenities you need.

Liebig Street in the heart of the centre, has a great variety of shops, restaurants and coffee shops too.

Top attractions in Warrnambool

Hop in the car and just a short drive away from town you can easily explore nature nearby as well as the Great Ocean Road, with the 12 Apostles only 1 hour away.

Warrnambool is steeped in a rich history that dates back to the 1800, it has a whole village replica at Flagstaff Hill that showcases life how it was in a traditional maritime village.

For nature lovers, just 14 km west of Warrnambool, you can venture inside a now extinct volcano crater at Tower Hill Reserve. The reserve is now a thriving habitat of native flora and animals.

The Winter Whales is one of the big attractions that bring tourism into Warrnambool over the winter months. Between June to September, many different types of whales migrate to the coast of Warrnambool at Logans beach during calving season. Along with the beautiful beaches of Lady Bay, Main Beach and Stingray Bay, Warrnambool has attractions suited for everyone!

Where to Eat in Warrnambool with the family

Raffetys Tavern

When to visit: Open 10 am to 1 am, Monday to Sunday

Great for: Huge indoor Playground for the kids and tasty smoked meats!

A bit about Raffetys Tavern

The pub is located just a few minute’s drive outside of the center so you will need to drive there – but I did see that they have a free courtesy bus that can pick you up or drop you off on request.

This pub was a really pleasant surprise and real hit with the kids. The pub is spacious, very clean and the service was great.

They have specials on most nights, we visited on a Tuesday and the kids eat free with each main meal you purchase. The kid’s meals were pretty basic and not too big but were enough for my little ones.

The biggest drawcard for families visiting is indeed the biggest play area I’ve ever seen inside a pub. They have a full-size bouncy castle, and stairs that take them up to a mezzanine floor with a tunnel slide to the lower floor playground.

There are also cameras and TVs so you can see the play areas from most the dining room which is a plus. Yu can also be seated right next to the play area to keep an eye on the little ones. This place is an ideal place to eat in Warrnambool with the family!

The Food

They have a large menu with a lot of the pub classics like Parmas, Pizza and Seafood, as well as a great variety of plant based options too. We opted to go for the smokehouse specials that they were running at the time of our visit and they did not disappoint, both meals were very tasty and of good portion size.

The 12 hour smoked brisket was a highlight: melt in the mouth meat and it came with sides of buttery charred corn, creamy potato salad and a delicious home made BBQ sauce. The smoked pork ribs were also delicious and came with crispy beer battered onion and a crunchy apple slaw.

The Dart and Marlin

When to visit: Open 4 pm to 11 pm, Wednesday to Saturday

Great for: Tasty stone baked thin crust pizza and cocktails for the grown ups

A bit about the Dart and Marlin

Located right in the center of Warrnambool, this trendy pub serves up some delicious pizzas and the grown-ups can enjoy some Live music and great cocktails too! We tried this place for some pizzas to take home and they were a standout.

The Food

Crispy stone-baked thin base and tasty quality toppings made these pizzas delicious. On the extensive pizza menu, we tried the Potato and Leek Pizza which was topped with some beautifully caramelized onion and 3 cheeses.

The Smokey Pig had toppings of smoked tomato and just the right amount of crispy pancetta, pepperoni & pork sausage. We got the large pizzas and there were no leftovers – Priced at a reasonable $24 – $25 per pizza, they were just too good!

Cheese World

When to visit: Open 10 am to 3 pm, Monday to Friday

Great for: Brunch, Cheese toasties & creamy milkshakes

A bit about Cheese World

Oh the humble cheese toastie.. do I even need to say more? I’d go back just for that. What a great brunch/lunch spot this is if you are out and about exploring around Warrnambool.

Cheese World is located in Allansford, 10 minutes drive from Warrnambool. It’s also very close to Warrnambool Wildlife Encounters which is most definitely worth a visit too! Cheese World was the perfect stop to refuel after a morning of sightseeing.

The Warrnambool Cheese and Butter Factory (now known as Saputo Dairy) is across the road and showcases their dairy products that are produced on site.

Alongside the Cheese World Shop and café, there is also a free museum! In the museum you can have a look at farm and household items from the 19th century. To have a closer look at them you just scan a QR code to learn more about the items.

In the shop they have a good variety of cheeses available to purchase, mainly cheddar style, seasoned with different things such as smoked or with peppers etc.. They also offer free tastings before you buy.

Lots of different chutneys and fruit paste are also available for purchase to accompany the cheese. Some interesting combinations of the chutneys included Spiced Pear paste and Green Tomato pickles.

The Food

The café is spacious and has a simple menu but you can get some really tasty toasties that can rival the ones in fancy café in the city. It’s a great place to have a nice brunch or light lunch with the family while visiting Warrnambool!

They use Zeally Bay Sourdough which makes a gorgeous sourdough bread in Torquay, and fill it with lots of cheeses. The Three Cheese toastie has a wonderful mix of King Island Brie, Heidi Farm Raclette and a local Vintage Cheddar and was delicious.

The Ham and cheese toastie was also very nice and reminded me a bit of a croque monsieur because of the tangy Dijon mustard in it.

For the kids they have cheese toasties that are only $6 and they are huge! It was definitely enough for my kids (2 under 5) to share with some chips ($3 extra as a side).

To wash it all down, don’t miss on trying the thick-shakes and milkshakes with local Sungold Fresh Milk!

Where to stay in Warrnambool

Warrnambool has some great options and a lot of variety of accommodation types to suit all budgets. There are some large hotels in the Lady Bay area near the beaches, such as the Deep Blue Hotel & Resort with their own Hot Springs and Lady Bay Resort with apartment style accommodation.

Quest Warrnambool and Warrnambool Gallery apartments are two of my favourites located right in the heart of the city centre. There are also many other options that includes Holiday Parks, Motels and AirBnbs.

This elegant Balsamic and Maple Roasted Pumpkin is not only beautiful to look at but a delight to eat. The sweetness from the Maple syrup gives the pumpkin and red onion a wonderful caramelisation. It pairs so well against the tartness of the balsamic vinegar and the fresh pomegranate seeds! Perfect as a side dish to accompany roast meats but just as good to eat on its own as the creamy feta makes it a complete meal.

Ingredients needed for this Balsamic and Maple Roasted Pumpkin

  • Pumpkin: Any type will work! I usually use Jap or Butternut Pumpkin. The main difference with the two is that if you want to have neater slices of pumpkin, Jap pumpkin can be cut easier into wedges.
  • Red Onion
  • Maple Syrup: Gives the pumpkin some great caramelisation. Ensure to choose a Pure Maple syrup which is 100% maple syrup, not a maple flavoured syrup (which is mainly refined sugar and artificial flavours). The caramel flavour in pure maple syrup doesn’t compare and it’s also better for you!
  • Balsamic Vinegar: I always have on hand a bottle of Aceto Balsamico di Modena to use for dressing salads and it’s great for cooking too! It’s a sweeter vinegar and the sourness of it is perfect against the maple syrup.
  • Pine Nuts: Add a nice nuttiness to the dish. Can be substituted for slivered almonds, or even Pepitas (pumpkin seeds) added after roasting are a great alternative.
  • Feta: I like using Danish feta which is a creamier, milder version of the traditional Greek feta. Can also be substituted for Fresh Ricotta cheese.
  • Pomegranate Seeds: Add a beautiful sweetness and tartness to complement the sweet pumpkin.
  • Salt, Pepper, Olive Oil and Fresh parsley for garnishing.

How to make this Balsamic and Maple Roasted Pumpkin

Chop the Pumpkin

The hardest thing about this dish is probably chopping the pumpkin as the oven will do the rest of the work! I used a Jap pumpkin for the recipe as it can be chopped in neat wedges, with a thickness of roughly 4-5 cm. You can also cube the pumpkin if you prefer in 5 cm cubes.

A average sized pumpkin that weighs about 1.2-1.3 kg, once peeled, deseeded and chopped should give you roughly 1 kg of chopped pumpkin.

Roast the Pumpkin & Red Onion and Maple Syrup

In a large bowl, combine the Maple syrup, salt, pepper and olive oil. Add the pumpkin and sliced red onion and combine till all coated.

Lay the pumpkin and onion across a few oven trays lined with baking paper, in a single layer, so that each piece gets the best caramelization and keeps its shape during roasting.

Roast for around 35-40 minutes at 180 degrees, turning the pumpkin half way through.

Add Pinenuts & Balsamic Vinegar

Add the balsamic vinegar and the pine nuts to the roasting tray/s. Gently combine with the pumpkin and red onion and continue roasting for an additional 10 minutes, at 200 degrees.

Top with Feta, Pomegranate Seeds & Fresh Parsley

The Pumpkin and onion should now have a nice char on it and be completely cooked all the way through. Place in a serving dish and top with the crumbled feta, the chopped parsley the pomegranate seeds. Add some ground pepper to taste. Serve immediately or when slightly cooled! Enjoy!

Ingredients

  • 1.2-1.3 kg Pumpkin (Jap or Butternut, cubed or sliced)
  • 2 Red Onions (Sliced)
  • half tsp Salt
  • 3 tbsp Olive Oil
  • 6 tbsp Pure Maple syrup
  • half cup Pine Nuts (100 gr approx)
  • 2 tbsp Balsamic Vinegar
  • half cup Danish Feta (Crumbled, 100 gr approx)
  • 1 Pomegranate (Seeds from 1 pomegranate)
  • 1 bunch Parsley (finely chopped)
  • Ground Pepper (to taste)

Instructions 

  • Preheat the oven to 180 (or 160 fan forced).
    Cut the pumpkin into 4-5 cm thick wedges or cubes.
    An average sized pumpkin that weighs about 1.2-1.3 kg, once peeled, deseeded and chopped should give you roughly 1 kg of chopped pumpkin.
  • In a large bowl, combine the Maple syrup, salt, pepper, and olive oil, add the pumpkin and sliced red onion, and combine till all coated.

Leftover risotto? The perfect excuse to make Arancini! These Pumpkin Arancini are a great way to reinvent leftover rice and make a delicious new meal out of it. I’m using my Pumpkin and Bacon risotto recipe and adding feta and mozzarella, to make these addictive crispy rice balls, together with a punchy Tomato Chilli sauce to dip them in. Perfect for a tasty starter to please a crowd!

Ingredients needed for these Pumpkin Arancini

Arancini

  • Chilled, cooked Risotto: The essential ingredient of that you will need is leftover risotto. I used 7 cups of cooked rice, from my recipe of Pumpkin and Bacon Risotto. Any other risotto type will also work fine, as long as it’s cold (not from frozen). Warm or hot rice will not stick together well during shaping and frying. Regarding rice type – arancini balls need to be made with a starchy rice like an Arborio, Carnaroli, or Vialone Nano Rice so that it will combine together well.

  • Feta and mozzarella Cheese: This will add some extra flavour and cheesiness to the Pumpkin Arancini. I generally choose smooth Danish feta and shredded mozzarella, but you can also use any other cheeses that you like! Big chunks of cubed mozzarella to put in the middle of the arancini also work well!
  • Crumb: I usually crumb in 3 steps for extra crispiness. Flour first, beaten eggs and breadcrumbs last. A standard breadcrumb works great as well as a crispy Panko breadcrumb. If you want to get creative and have the time, you can do a separate chili crumb by adding a teaspoon of dried chili to half the breadcrumbs to give some extra kick to a batch of arancini.
  • Vegetable or canola oil: For shallow frying the arancini.

Tomato Chilli Sauce

  • Italian Tomato Passata: I like to use Mutti brand
  • Chilli Sauce: Any chilli Sauce, I use Sriracha or replace for Chilli Flakes
  • Garlic Cloves
  • Olive Oil & Salt

How to Make these Pumpkin Arancini

Combine the risotto with the cheeses and shape the arancini

Combine the chopped feta and mozzarella with the cold risotto till it’s all evenly mixed. With your hands tightly shape the rice into golf-sized balls until you have used up all the risotto. As a rough idea, 7 cups of cooked rice will yield roughly 30-35 arancini.

Crumb the Pumpkin Arancini

Set up three separate bowls, one with plain flour, one with the lightly beaten eggs, and one with the breadcrumbs. Coat the rice balls in flour first, then egg, then breadcrumbs and set them aside in a separate large plate.

Tip: To not get the coatings (and your hands) too messy, the best way is to use one hand to handle the dry coatings of flour and breadcrumbs, and the other hand to handle just the dipping in the egg.

Shallow fry the Pumpkin Arancini

Once all the Arancini are shaped and coated, start frying. I usually just shallow fry the arancini, so I set up a large nonstick or cast iron pan and add about 1 cup of Vegetable Oil.

Once the oil is hot (you can check by dipping a wooden spoon and if little bubbles appear all around it it’s hot), add the arancini, in batches, making sure not to overcrowd the pan.

Fry them on each side for 1-2 minutes, and constantly turn them over to the other sides till they are crispy and golden all around. Make sure to keep an eye on them constantly as they can burn very quickly once the oil is hot!

Once fried, set them aside on a large plate lined with paper towels to absorb any excess oil. The pumpkin arancini are ready to eat!

How to make the Chilli Tomato Sauce

This chili tomato sauce is perfect for dunking the arancini and is great served hot or cold. It can also be made in advance too!

To make the sauce, in a pot, gently cook the garlic in some olive oil for 1-2 minutes. Add the passata, the Sriracha and the salt and simmer over low to medium heat for 15 to 20 minutes.

Serving Suggestions for these Pumpkin Arancini

Once the arancini are fried, they are perfect to eat immediately with the Chilli Tomato Sauce for dipping. They are great as a starter, or as a main meal. Enjoy!

Storage suggestions for these Pumpkin Arancini

If you are not eating them immediately they defenitely can be made in advance. Once fried, they will last in the fridge for up to 2 days or can be frozen in batches in an airtight container for up to 1 month.

To reheat, if they are in the fridge, they will need around 15-20 minutes at 200 dg or 180 dg if fan forced.

From frozen, defrost overnight or in the microwave and as per above till piping hot.

  • 3/4 Cup Shredded Mozzarella (approx 150 gr)
  • 1/2 Cup Feta (crumbed, approx 100 gr)
  • 1 Cup Vegetable or Canola Oil (for frying)
  • 1 Cup Plain white flour
  • 2 Eggs (lightly beaten)
  • 1.5 Cups Dried Breadcrumbs (Plain or Panko)

Tomato Chilli Sauce

  • 2 tbsp Extra Virgin Olive Oil
  • 2 Cloves Garlic (finely chopped)
  • 2 Cups Tomato Passata
  • 2 tbsp Sriracha Sauce
  • 1/2 tsp Salt

Instructions

Notes

Yield: As a rough idea, 7 cups of cooked rice will yield roughly 30-35 arancini.

I love a good risotto, and after making so many of them – when pumpkin season comes around this Bacon Pumpkin Risotto is the one I crave to eat! A warming fall recipe, this risotto is so creamy and lush. Every rice grain needs a bit of loving with the gentle stirring and the result is a wonderful dish that will make you want to go back for more!

Ingredients to make this Bacon Pumpkin Risotto

Pumpkin

Any type of pumpkin or squash will work well in this Bacon Pumpkin Risotto! I usually use Jap/Kent or Butternut.

Rice

For this Bacon Pumpkin risotto I used Arborio rice which is readily available at most supermarkets and perfect for risotti.

The other variety that you can use, that is actually even better but not in every supermarket – is the Carnaroli variety. It’s a slightly shorter rice which a higher starch content, which delivers an even creamier risotto!

Bacon

I used smoked bacon rashers. I find the smokiness is a nice addition to the delicate pumpkin flavour. You can use any type of bacon that you like, or omit all together if you prefer to have the dish meat free. Just note that you may need to add some additional salt to the rice as the bacon will add already some saltiness to the dish.

Chicken or Vegetable Stock, Salt

I usually make stock at home that I don’t add salt to right up until I use it. For this recipe of 3 cups of rice I used roughly 6 cups (1.5 lt / 60 oz) of unsalted chicken stock, and added 2 tsp of salt.

Depending on your stove, size of the pot and the heat you are cooking with, you may go through a bit more or less stock. If you find that you need more you can add more stock or water (half a cup at a time) during the cooking of the risotto.

If you don’t have stock on hand, replace it with chicken or vegetable stock cubes and the equivalent amount of water needed. Check the seasoning on the risotto as you cook as these are generally already salted and depending to your taste you might not need to add as much salt.

Other ingredients:

  • Sage & Parsley
  • Parmesan (Parmigiano Reggiano preferably)
  • Onion and Garlic
  • Freshly Ground Pepper, Butter & Olive Oil

How to make this Bacon Pumpkin Risotto

Make a soffritto

Get yourself a large pot with a lid and start off by making a soffritto.

Heat 3 tbsp of olive oil to a large pot, add the chopped garlic and onion and over medium heat stir to cook gently, till softened for 4-5 minutes.

Cook the Bacon and Pumpkin

Once the onion and garlic have softened, add the chopped Pumpkin and Bacon and cook for around 10 minutes till the pumpkin begins to soften.

Add the rice and stock

Add the rice and stir with the pumpkin and bacon mixture till well coated for 1-2 minutes.

Optional step: Add the wine and combine with the rice for 1-2 minutes for additional depth of flavour!

Next, add half the stock, salt and chopped sage and continuously stir gently over low to medium heat for 10 minutes till the risotto begins to thicken.

Add more stock a ladle at the time and continue cooking for an additional 5-6 minutes. Add more water or stock if necessary if the pot looks too dry.

After around 15 minutes of cooking the risotto, the rice should mostly cooked through but still with a bit of bite to it.

Add Butter and Parmesan

With the heat still on, add the butter, parmesan, a few tablespoons of olive oil and chopped parsley. Check seasoning if to your liking and add some ground pepper.

Mix well with a wooden spoon till the cheese and butter is combined to the risotto for 1-2 minutes.

Rest the risotto & Serve

Turn the heat off, put the lid on the pot and let the risotto rest for 5 minutes. This will allow the risotto to continue cooking and become super creamy!

After 5 minutes of resting the bacon pumpkin risotto is ready to serve. Serve immediately with more parmesan and ground pepper. Enjoy!

Serving Suggestions & Storage

I usually make a large batch of this Bacon and Pumpkin risotto recipe. 3 cups of raw Arborio Rice will make a generous 8-10 serves.

If you need to make less – you can halve the recipe. The cooking time for the rice will be the same.

When making a big batch of risotto like this I like to use any leftover to make Pumpkin Arancini, check out the recipe!

Any leftover risotto will keep in the fridge for 1-2 days and you can reheat it in the microwave with a few tablespoons of water. Just note that the consistency to eat this is the best when just made!

The risotto by itself in my opinion is not suitable for freezing. It has a large amount of liquid (both the rice and pumpkin) which alters the texture too much.

  • 1 Small Onion (finely chopped)
  • 3 Garlic Cloves (finely chopped)
  • 500 gr (or about 4 cups) Chopped, Peeled and Deseeded Pumpkin (cut into 2-3 cm cubes)

  • half cup Dry white wine ((optional))

  • 4 tbsp Grated Parmesan (plus some more to serve)
  • 2 tbsp Butter

  • Ground Pepper (to taste)

Add more stock a ladle at the time for an additional 5 minutes. Add more water or stock if necessary if the pot looks too dry. After the 15 minutes of cooking, the rice should mostly cooked through but still with a bit of bite to it.
  • With the heat still on, add the butter, parmesan, a few tablespoons of olive oil and chopped parsley. Check seasoning if to your liking and add some ground pepper. Mix well with a wooden spoon till the cheese and butter is combined to the rice for 1-2 minutes.
  • Turn the heat off, put the lid on the pot and let the risotto rest for 5 minutes. This will allow the risotto to continue cooking and become super creamy! After 5 minutes the bacon pumpkin risotto is ready to serve. Serve immediately with more parmesan and ground pepper.

Notes

Stock and salt amount: For this recipe of 3 cups of rice I use roughly 6 cups (1.5 lt / 60 oz) of unsalted chicken stock, and added 2 tsp of salt. Depending on your stove, size of the pot and the heat you are cooking with, you may go through a bit more or less stock. If you find that you need more you can add more stock water (half a cup at a time) during cooking. If you don’t have stock on hand replace it with chicken or vegetable stock cubes and the equivalent amount of water needed. Check the seasoning on the rice as these are generally already salted and depending to your taste you might not need to add as much salt.
Servings: I usually make a large batch of this Bacon and Pumpkin risotto recipe – 3 cups of Arborio Rice will make a generous 8-10 serves. If you need to make less – you can halve the recipe. The cooking time for the rice will be the same.
Storage: Any leftover risotto will keep in the fridge for 1-2 days and you can reheat it – but the consistency to eat is best when just made! The risotto by itself in my opinion is not suitable for freezing. It has a large amount of liquid (both the rice and pumpkin) which alters the texture too much!

Where is the Milawa Gourmet Region

The Milawa Gourmet Region encompasses the regional towns of Milawa, Oxley, Tarrawingee, Whorouly, Markwood, located in the north – east of Melbourne, Victoria.

The town of Milawa itself is just under 3 hours drive from Melbourne and nestled within the King Valley Wine Region & Milawa Gourmet Region. The closest largest town is Wangaratta, about 18 km away from Milawa.

The centre of Milawa is quite small and easy to miss actually – it just has your essentials like a general store, the bakery & the hotel.  But don’t be fooled, have a little drive around and you will come across so many local producers and you will love the variety of foods & wineries they have on offer.

Just around the corner from the main street is Brown Brothers Winery – and that is a huge establishment with a gorgeous restaurant & cellar door.

TIP: If you like to ride, take your bike with you! Once you have settled into Milawa – you can ride to nearby Exley in the popular Milawa Gourmet Ride.

You can do a few (or many) stops along your pedal and have some delicious food or a wine tasting. Or, you can also join one of the many Pedal to Produce Tours available in the area.

Where to stay in Milawa

We were staying in nearby Whorouly for a week long country getaway and Milawa was our daily stop, only 15 minutes drive away to pick up some delicious food supplies.

There are many great options located in Milawa and in nearby towns, from cozy B&Bs to Motels, caravan parks & AirBNBs, there are lots of options for a weekend getaway.

3 Must do stops in the Milawa Gourmet Region

Hurdle Creek Still – small batch gin distillery

When to visit: Open 10 am to 5 pm, Thursdays to Mondays (Closed Tuesday & Wednesday)

I had to stop here as I’m a big fan of gin and this was just too good to miss. The distillery is about 6 km out of town and well worth going!

This unassuming looking shed, is a rustic gin distillery that only produce in very small batches, using juniper and a special combination of botanicals that are vapour infused into the spirit.  

You can have a tasting for a small charge (or free if you make a purchase) and the owner will happily take through the process on how the gin is made. They have a great selections of gins for sale as well as other spirits they make like a zingy Japanese style Yuzu and a decadent Dark Cacao liqueur. A must see stop in the Milawa Gourmet Region.

Milawa Cheese Company

When to visit: Open 9 am to 5 pm, Everyday

This is a cheese lovers paradise –  they have a wonderful array of cheeses and you can do a tasting. There is usually a board up saying which ones are on offer on a particular day.

They have a vast selection and they focus a lot on locally made bries, camemberts and different varieties of blue and goat cheeses too. I’m a big fan of camembert and I very much enjoy the Milawa Camembert, it’s creamy with a buttery, rich flavour.

In the store they also sell lots of other produce and chutneys, honey, crackers, jams.. you could very much make up your own nice picnic basket! There is also an adjoining café next door,

Milawa Bread and Kitchen, is open for breakfast and lunch and makes a beautiful array of fresh breads, that again you can enjoy with the cheeses.

Milawa Mustards

When to visit: Open 10 am to 4.30 pm, Everyday

This little place is a hidden gem. From outside, it’s a little house, but once you walk in I can guarantee you won’t be leaving without a few of these little jars of deliciousness.

This is another place that produces only small batches, made locally and onsite. If you are lucky enough to find all the mustard types in stock -they have 7 varieties, from the Classic Honey Mustard to French. My favourites, are the Bourbon & Green Peppercorn Mustards and they are excellent on some beef or pork.

This gorgeous little shop doesn’t just sell mustards either, they also  have jam, dressings and chutneys. The Homemade Tomato Chutney, is another one I recommend adding to your basket – it’s perfectly spiced with oranges & ginger. You can get in in a mild or hot version and goes just so well with some cheese and bread.
